Spaghetti Sauce
One of the most loved meals in our house is the good old spag bog! It is versatile and you can use what ever you have at home, spice it up or keep it plain; the choices are endless! I hope you enjoy this version of the traditional Spaghetti Bolognese sauce.
3 Spring onions, chopped
2tbs Olive Oil
3 Large tomatoes, smoothed in a blender
1Carrot, grated
1Zucchini, grated
1tsp Salt
1/2tsp Fresh ground pepper
1tsp Basil
1tsp Oregano
1/4tsp Thyme
1Bay leaf
A pinch of garlic powder
Notes:
*If tomatoes are not available you can use 400g of canned tomatoes instead and add 3tbs of tomato paste
* Add 500g of minced beef or pork for a bolognese sauce
Method
1. Heat olive oil in a large pan on medium heat. Add spring onions and cook until tender, never reaching more than a slow sizzle.
For a meat sauce, cook shallots with minced meat in a large pan on medium heat.
2. Add remaining ingredients, stirring as needed. Simmer for 30 minutes.
3. Remove bay leaf and serve with desired pasta.
***This recipe is low in tyramine, onion may be a trigger for some.***
